Spicy Seeds

The best byproducts of pumpkin carving are the seeds! I like experimenting with different toppings and might have found my favorite flavor combination yet: Spicy Chili Lime Pumpkin Seeds

After scooping, rinsing, and soaking the seeds in salty water, I combined the following in a large plastic ziploc bag:

juice of 1 large lime
a couple drizzles of chili oil (found in the asian section of the international aisle)
a couple shakes of chili powder
kosher salt

Add the seeds the the mix, shake generously to coat, and spread into a thin layer on a foil-lined baking sheet (spray with nonstick oil first--I forgot this step and some got stuck!). I put them in a 350 oven until they are golden brown and crispy.
