Here's a soup recipe Kendall passed along, which is quick, easy and "man-friendly."
Italian Sausage Soup
8 oz. (2 links) hot or sweet Italian sausage
4 c. fat-free, less sodium broth
1 (14.5 oz.) can diced tomatoes with basil, garlic & oregano
1/2 c. uncooked small shell pasta
2 c. bagged baby spinach leaves
2 tbsp. grated fresh Parmesan
2 tbsp. chopped fresh basil or cilantro
Heat large saucepan over medium heat. Remove casings from sausage. Add sausage to pan and cook 5 min. until browned, stirring to crumble. Drain & return to pan. Add broth, tomatoes & pasta to pan and bring to a boil over high heat. Cover, reduce heat and simmer 10 min. until pasta is done. Remove from heat. Stir in spinach until wilted. Top with cheese and fresh herbs.
