
As a regular reader of
Dinner, A Love Story, I was particularly interested when the author asked readers to contribute their
tried-and-true go-to weeknight family dinner recipes. Tucked between all the predictable pasta dishes, I found this gem. How has it taken me so long to try this ridiculously easy recipe?
Shredded PorkPut a
5-ish lb. pork loin in the slow cooker. Dump a jar of
salsa verde and
3 tbsp. lime juice on top. Cook on low for 7-8 hours. Shred with 2 forks when done and stir in some chopped onion and cilantro.Serve as tacos, bbq sandwiches, in a hash, or anything else your heart desires.
