Cheesy Veggie Nuggets

Will has become an increasingly picky eater as he gets older, especially when it comes to vegetables. But so far, he hasn't figured out to reject this broccoli-filled food.

Cheesy Vegetable Nuggets
8 oz (1 cup) frozen broccoli florets 

4 oz (1 cup) dry breadcrumbs* 

6 oz (1 1/2 cups) cheddar and/or mozzarella, grated
2 1/2 tbsp water

2 Tbsp olive oil 

1 1/2 tsp baking powder



Heat the oven to 375. Cook the broccoli, then drain and chop well. Combine with the remaining ingredients and mix well. Spread mixture into a 1/4 to 1/2" thick rectangle on a greased baking sheet. Bake for 20-25 mins or until golden brown. Let cool, then cut into smaller squares. These can be divided and frozen. Serve warm.

* For breadcrumbs, I usually toss a few pieces of torn whole wheat bread into the food processor.
