Meat Sauce

Doug raved about the version of meat sauce I made recently, loosely based on Alton Brown's recipe.

Meat Sauce
2 sweet onions, finely chopped
3 stalks celery, finely chopped
5 cloves garlic
kosher salt and black pepper
ground beef chuck
ground pork
1 - 2 cups white wine
3 cans diced fire-roasted tomatoes
dried oregano, basil
small can tomato paste
1 Tbsp. ketchup
1-2 Tbsp. balsamic vinegar
1 Tbsp. Worcestershire sauce

Caramelize the onions over low heat. Add celery, garlic and salt & pepper. Transfer to a slow cooker. Brown the beef and pork, deglazing the pan as necessary with white wine. Add to slow cooker, along with remaining ingredients. Add wine or water to desired consistency. Let simmer on low for a few hours. Serve with pasta and fresh parmesan.
