Swiss Chard with Chickpeas and Couscous

This might be my new favorite dish. Doug asked where the rest of dinner was, but he ate it nonetheless. The original recipe is from Real Simple, and my adaptation is below.

Swiss Chard with Chickpeas and Couscous
1 1/4 cups Israeli couscous
2 1/2 cups water
1/2 cup walnuts, toasted
2-3 Tbsp. olive oil
2 cloves garlic, minced
1 can chickpeas, rinsed
1/2 cup golden raisins
1 large bunch Swiss chard, stems trimmed
salt and pepper, to taste

Bring the couscous and water to a boil, then cover and simmer until tender and the water has been absorbed, about 15 min.

Meanwhile, in a large skillet over medium heat, add the oil, and heat for 1 minute. Add the garlic and cook for 1 minute. Add the chickpeas, raisins, chard, salt and pepper. Cook, stirring occasionally, until the chard is tender, about 5 minutes. Remove from heat.

To serve, scoop couscous into a shallow bowl. Top with the chard and sprinkle with the pine nuts. Serves about 4.
