Shrimp tacos

We don't fry many foods around here, but maybe that should change based on the shrimp tacos we had this week.

Fried Shrimp
Coat uncooked peeled and deveined shrimp in beaten egg whites, then toss with a mixture of flour, corn meal, salt & pepper. Fry in small batches (I used canola oil in my cast iron skillet), drain on paper towels, and finish with a squeeze of fresh lime juice. We served ours in corn tortillas with fresh salsa from the garden, guacamole and a dollop of plain yogurt.
