The Mango

Mangoes are near the top of the list of my favorite spring/summer fruits, especially when used in fresh salsa. The combination I prefer:

Mango Salsa
1 mango, diced
1 small sweet onion, diced
4-5 roma tomatoes, diced (bonus points when summer home-grown tomatoes are available!)
handful of fresh parsley or cilantro, diced
juice of 1-2 limes
splash of hot sauce
garlic salt and pepper to taste

Depending on what I have to use up in my fridge, sometimes bell peppers, corn, and/or black beans also make their way into the recipe. Mix all ingredients together and serve over grilled fish or chicken, as a taco or soup topping, or with tortilla chips. Like many mixed dishes, it's even better the next day. No mangoes available? Try substituting fresh peaches.
