Kitchen tool I don't know how I functioned without before: immersion blender. It's so much easier than trying to transfer hot soups back-and-forth to a blender, and it also has different attachments to be a mini-processor (don't have to pull out the big one when I only need a few cloves of garlic minced), and a whisk (great for foamy-topped coffees).
